Los Angeles Periodontist Discusses an Enzyme in Saliva that Can Help Maintain Blood Glucose

Published in The Journal of Nutrition (April 2012), scientists from the Monell Center, led by Abigail Mandel, PhD, analyzed the saliva and blood samples from 48 healthy adults. First, researchers measured saliva amylase activity and separated subjects into high amylase (HA) and low amylase (LA) groups. Participants each drank a simplified cornstarch solution and then had their blood tested over a two-hour period to analyze insulation concentrations and blood glucose levels. The study found that participants in the HA group had lower blood glucose levels when compared to those in the LA group. This finding suggests that individuals in the HA group may be able to release insulin earlier than those in the LA group. The release of amylase enzymes helps to break down simple sugar molecules before they reach the bloodstream, the study shows that a higher concentration of this enzyme directly aids a person in maintaining healthy blood glucose levels.
